I just love these. I used a 12 ounce onion for 4 3-ounce patties, and I would probably be inclined to crank that ratio up even more. We should also get a mandolin to slice the onions thinner. Salting the sliced onions and allowing them to sit for a bit allowed for quicker cooking times and improved flavor. The steamed buns got a little soggy, but I’m good with it.
