Ground sirloin, with Italian crumbs, mushroom gravy, provolone, Festival classic hamburger buns.

Comments:

The gravy was the star of the show here. Caramelized the onions with Kerrygold butter and California olive oil, added garlic and mushrooms to simmer down further, turned to roux with flour, then into gravy with beef broth and Worcestershire sauce. Perfect for general usage, including on these burgers. Mixing in breadcrumbs proved to be a mistake – great texture for a classic Salisbury steak but turns out a bit mealy when eaten with a roll and cheese. Rolls were good but could have been toasted more. Provolone was a great pairing, no complaints there.

Overall verdict is that these were sloppy, super enjoyable, but could be taken up a notch with thick, meaty patties and much more heavily toasted buns to stand up to the messiness.
